The Ultimate Tomato & Basil Pasta Serves: 2 | Prep: 5 mins | Cook: 10 mins 200g dried spaghetti 1 clove of garlic, peeled and sliced 1 bunch of fresh basil 400g tin of plum tomatoes Extra virgin olive oil Parmesan cheese Method: Cook pasta in boiling salted water. Sauté garlic and basil stalks in oil. Crush tomatoes into the pan; simmer. Toss pasta with sauce and torn basil leaves. Finish with oil and grated Parmesan. 🥗 2. Super-Quick Roast Chicken Salad Serves: 4 | Prep: 10 mins | Cook: 20 mins Ingredients: 2 chicken breasts, flattened 1 tsp dried oregano Mixed salad leaves 1 cucumber, sliced 250g cherry tomatoes Lemon & olive oil dressing Method: Season chicken with oregano, salt, and pepper. Pan-fry chicken until golden and cooked through. Slice chicken into thick strips. Toss greens, cucumber, and tomatoes in dressing. Top the salad with warm chicken. 🐟 3. Pesto Salmon Parcels Serves: 2 | Prep: 5 mins | Cook: 15 mins Ingredients: 2 salmon fillets (150g each) 2 heaped tsp green pesto 150g green beans, trimmed Baking paper Method: Preheat oven to 200°C (400°F). Place beans on a large piece of paper. Lay salmon on top; spread with pesto. Add a squeeze of lemon and a splash of water. Fold paper to seal; bake for 15 minutes. 🍫 4. Quick Chocolate Mousse Serves: 4 | Prep: 10 mins (plus chilling) Ingredients: 100g dark chocolate (70%) 200ml double cream 1 tsp vanilla paste A pinch of sea salt Method: Melt chocolate in a bowl over simmering water. Lightly whip cream with vanilla until soft peaks form. Fold cooled chocolate and salt into the cream. Spoon into glasses and chill for 2 hours.
